Natural Product Quality Through High G-Force Separation: Engineering Yeast and Sediment Removal Before Bottling

At an integrated production facility specializing in fruit processing and fermented food production, our high-speed disc-stack separator system was commissioned for sediment removal and product clarification, one of the most critical quality stages in vinegar processing.

The primary objective was to rapidly remove the vinegar mother, yeast cells, and micron-sized organic sediment formed during fermentation while preserving the product’s distinctive aroma, acidity balance, and natural characteristics.

Process and Separator Engineering

Traditional settling and filtration methods are time-consuming in vinegar production, often result in significant product losses, and tie up valuable storage tank capacity.

Fine Clarification with High G-Force: Thanks to its specially designed disc stack and high centrifugal forces, the system precisely separates submicron suspended particles and turbidity-causing compounds from the liquid phase.

Hygienic Stainless Steel Construction and Enclosed Design: The enclosed system features stainless steel construction and meets stringent food hygiene requirements, with compatibility for clean-in-place (CIP) cleaning. By preventing contact with the external environment, it minimizes oxidation and helps preserve product freshness.

Automatic Discharge with a Self-Cleaning Mechanism: Separated solids and sediment are automatically discharged from the system at defined intervals through the integrated automation system, without interrupting the production flow.

Key Deliverables and Added Value

Exceptional Visual Clarity and Extended Shelf Life: Sediment formation and turbidity inside the packaging after bottling were eliminated, achieving the clear, bright appearance demanded by consumers.

Significant Process Time Savings: Natural sedimentation processes that could take weeks were replaced with continuous processing through separator technology, increasing tank turnover rates and production capacity.

Consumable-Free Operation and Minimal Product Losses: The need for conventional filtration media and filter aids was eliminated, minimizing operating costs associated with consumables.
